Tiramisu - recette du jour

If i couldn't eat there'd be no point in living

I've heard two stories about the origins of Tiramisu :

The first one is set in Venice during the Renaissance, where the women would make a special dessert to eat with their lovers in the dead of the dark and sultry nights which would then sustain them through hours and hours of passionate lovemeking ... typiquement italien comme approche

The second and more banal one is that it's just a way of resucitating stale old cake by soaking in coffee and wine, then reserving it with heapings of cream or sweetened cheese.

Tiramisu

Serves 8

Preparation time : 20 minutes (+/-)
Chilling time : 5 hours minimum (overnight is best)

Ingredients :

1 lb Mascarpone
1/4 cup of sugar
2 tbs of Amaretto or Cognac
1 cup of thick cream
24 Lady fingers
1 cup of cold espresso coffee
1/2 cup of grated bitter chocolate

Method :

1) In a large bowl, whisk the Mascarpone, sugar and Amaretto until completely smooth.
2) In a seperate chilled bowl whisk up the cream until it forms soft peaks.
3) Fold the cream into the Mascarpone mixture.
4) Lightly dip half of the biscuits in the coffee and arrange them, in one layer, on a flat square dish.
5) Spread half the Mascarpone mixture over the biscuits.
6) Sprinkle half of the grated chocolate over the top.
7) Dip the rest of the biscuits in the coffee, top with the remaining Mascarpone mixture, spreading it to smooth. Sprinkle with the remainder of the chocolate.
8) Cover with clingfilm and refrigerate overnight.
