Chocolate and ginger cold cake

Instead of cooking, this cake is left to set in the refrigerator.

It's very easy and pretty much fool proof.

Ideal for summer afternoon teas.

You can also vary the recipe by using glacé cherries or raisins instead of ginger.



Chocolate & Ginger cold cake

Preparation time : 15 minutes
Chilling time : 60 mins (+/-)

Ingredients :

4 oz of plain chocolate
1 egg
2 oz of butter
3 oz of ginger biscuits
2 oz of roughly chopped crystalised ginger
1 tablespoon of Brandy
Icing sugar to dust

Method :

1) Melt the chocolate in a bain maire
2) Melt the butter in a small pan over low heat
3) Whisk the egg until frothy, then whisk in the melted chocolate and the melted butter.
4) Put the buscuits into a polythene bag, then crush them using a rolling pin
5) Stir the pieces into the chocolate mixture with the crystalised ginger and brandy.
6) Press the mixture into a small deep flan dish and put it into the coldest part of the refrigerator to set.

Serve as it is or with freshly whipped cream.
